It’s worth it

Gluten free bread is ridiculously expensive! Gluten free baking is tricky. I bought this book mostly for the bread recipes.

Pros:
There aren’t a bunch of weird ingredients in bread recipes (Although I had to buy psyllium husk, which is kinda pricey)
Recipes explain what each ingredient does in a recipe (great to pick up general gf baking knowledge).
They use their own gluten free flour mix- but they list the sub amounts for bobs redmill mix and King Arthur flour mix (note- I use namaste cup for cup blend and I used the sub amount for King Arthur)
Step by step picture in some areas of book.

Cons:
Not a lot of dinner recipes- it’s mostly bread, pasta, sides, desserts.

I did the math, and a loaf of homemade sandwich bread comes out to about half the price you would pay in store! Plus it’s a larger piece of bread and there not huge holes in the middle of it- those of you that eat gluten free bread know what I’m talking about! Not only that, but it tastes a hundred times better.

Hands down the best gluten free cookbook ever. All variables have been tested to come up with the best possible solution. We’ve got a celiac in our family. Made the red velvet cupcakes but turned them into cake. Everyone agreed it was the best GF cake I had ever made.

I have the volume 1 and 2 books and gifted this single one to my SIL and MIL. I compared the books and it appears no recipes have been omitted.

THE cookbook for Gluten Free

If you are gluten free, GET THIS BOOK! I read dozen of books and blogs and watched a million videos and still could not get my baking right at all. As someone who has baked my entire life, this was incredibly frustrating. Several members of an online group recommended this book. We already had several of ATK's cookbooks so I knew I wanted this. I learned more in the first 30 pages of this book than all that I mentioned before. Every recipe I have tried has been successful. What more could you ask for?

No bread will turn out white

I have used this book a lot and for the most part, it is terrific. It explains why they use certain ingredients which allows you to gain enough knowledge to adapt other recipes if you want. The desserts are yummy. The breads, except for the small baguettes which really don't rise properly, taste very good. Unfortunately, the result doesn't match the photos - think you are making white dinner rolls? Nuhuh! They use psyllium in all their bread recipes so those white dinner rolls turn out grey-brown. They rise well, taste delicious - but they sure as heck don't look like the photos. My husband loves their rustic bread - which again is greybrown, rather than like the photo. Sure as heck would like to know how they made those photos - using regular bread, perhaps? I follow the recipe exactly, including making up their own flour blend. Always the same result. Having sat that (as you can tell, I am bit irritated), I would still recommend buying this book. The recipes are solid, except for the small baguettes I haven't had any failures and the desserts are excellent. The breads do taste delicious.

Great find and FILLED with great recipes

I love this book. I love to cook but I HATE complex recipes, especially gluten free ones.

There are many bread recipes to choose from and well as other dishes. I love how Test Kitchen tells how and why the recipe works, so if you are looking to tweek something you know what was a total fail or tested and the results. They show comparative results using different ingredients too, which I also love.

Recipes we have tried so far are EYE POPPING WONDERFUL! If you need to be gluten free, this is a must have book!!

First pie crust recipe that EVERYONE loves!

Besides an amazingly good pie crust recipe, this book offers exceptional guidance regarding HOW different brands of GF flours (and other substitutions) will affect each recipe. The "Why This Recipe Works" paragraph in the beginning of each recipe helps me to become a better home cook, like the America's Test Kitchen TV Show 2001-2021 Cookbook, which I use as well. I also appreciate that this ATK How Can It Be Gluten Free cookbook offers plenty of options for GF pastas (even homemade GF pasta) and other savory dishes, not just the sweet stuff and breads and rolls. There are reviews of many brand name products as well.
Hands down, this has been the most useful GF cookbook I've tried, out of a half-dozen well-reviewed others. I choose GF to avoid inflammatory disease flares and our DDIL has Celiac. When cooking for us, I reference this book first. Even if it doesn't have a recipe I'm seeking, it's useful for helping me to figure out how to best adapt other recipes. Excellent resource for us.

Mixed bag

This book has some great recipes, but some of the ones you're craving the most a re huge stinkers. Their buttermilk pancake mix is way too liquid, resulting in awful, flat pancakes. Their chocolate chip cookie recipe calls for resting at room temp for 30 mins. This results in greasy, flat cookies since you add melted butter in the first place. To fix this rest them for 2-3 hours in the fridge. For all their testing, they sure missed some pretty glaring issues. And since gluten free ingredients are pretty expensive, each failed recipe that you have to tweak is a lot of $$$ down the drain.

The book itself isn’t constructed to be super durable but the recipes are heaven. My husband hates GF stuff, be he literally can’t tell any of this is gf. I made the scones this morning and he couldn’t stop raving about how good they were. You won’t regret buying this book. If you follow each recipe to the letter, you will love it all. But following each step is ultra important to success.
