Although you may choose to keep some meat in your diet for taste, social, familial or any other reasons, there is no nutritional reason to do so. We discuss protein (that inevitable topic when the notion of a plant-based diet is discussed) in the following section, but rest assured that if your diet isn't deficient in calories, it is practically impossible for you to be deficient in protein.To keep your body running efficiently, greens are one of the most important food groups. Green vegetables are among the most nutrient-dense of all foods and are full of alkaline minerals, including calcium, chlorophyll and amino acids. They make up your key Beauty Foods that regenerate and purify your cells.Besides greens, you want to eat substantial portions of a wide range of vegetables, which will supply you with key minerals, enzymes and vitamins. However, frozen vegetables are the next best choice if you don't have access to fresh produce or the time to purchase it. Canned vegetables should be avoided altogether, as they may contain preservatives or chemicals such as bisphenol A, are high in sodium and tend to have lower nutritional value than fresh or frozen vegetables. EAT MORE RAW THAN COOKED VEGETABLES Eating vegetables raw is the key to obtaining the most beautifying vitamins, enzymes and nutrition, so eat plenty of salads and raw veggies every day. Any type of heat will destroy some of their nutrients. But I know it's not reasonable to eat only salads all the time. It's okay to have some cooked vegetables, especially when you're transitioning and when eating dinner. When cooking vegetables, avoid charring or overboiling them, because you want to preserve the nutrients as much as you can. Steaming or lightly cooking in a bit of vegetable broth, for example, will retain some of the vegetables' nutrients and ensure they are digested easily. LIMIT ANIMAL PROTEIN Over the past decade or so, a number of high-protein, low-carb diets have become increasingly popular. A study published in 2002 and funded by the Atkins Center for Complementary Medicine researched fifty-one obese people who were put on the low-carb Atkins Diet. Over six months, forty-one subjects maintained the diet and lost an average of twenty pounds. Sounds good, doesn't it? But consider that the participants in the study were consuming an average of only 1,450 calories per day, which is 35 percent less than the average American consumption of 2,250 calories a day. On any kind of diet, if you were to restrict your calories by at least 35 percent, you would lose weight, at least for the short term. In the same study the researchers also stated that "at some point during the twenty-four weeks, 68% reported constipation, 63% reported bad breath, 51% reported headaches, 10% reported hair loss, and one woman reported increased menstrual bleeding."Another frightening figure from the study is that dieters had a fifty-three percent increase in the amount of calcium excreted in their urine, which is a big problem for bone density and health. A diet that creates such high levels of constipation shows how unnatural it is for the human body. Constipation holds toxins in the body and is incredibly aging.Digesting animal protein creates all sorts of by-products in the body, like purines, uric acid and ammonia by-products. These toxins are absorbed into your bloodstream through the colon and circulate all around your body. When your blood is clogged with toxins, it can't transport as many beautifying minerals, and these toxins can age and clog the skin cells of your face. Furthermore, excessive protein consumption overworks the liver and kidneys. In his book Conscious Eating, Gabriel Cousens, M.D., discusses how ammonia, a by-product of digesting protein, contributes to aging. As he notes, "Ammonia, which is a breakdown product of a high-flesh-food diet, is directly toxic to the system. It has been found to create free radical damage and cross-linking (a process associated with skin wrinkles and aging), as well as depletes the body's energy."Ketosis, which may occur as a result of a low-carb diet, whereby by-products called ketones accumulate in your body, makes the blood acidic. An acidic body tends to age faster. Take a look for yourself at people who are on high-protein, low-carb diets. They usually look "hardened" and far older than they are, with what I call the "old skinny" look, which has lost all its youthfulness. I'll bet you can think of some "old skinny" people!One study published in the Asia Pacific Journal of Clinical Nutrition focusing on the short- and long-term effects of high-protein and low-carb diets found that "complications such as heart arrhythmias, cardiac contractile function impairment, sudden death, osteoporosis, kidney damage, increased cancer risk, impairment of physical activity and lipid abnormalities can all be linked to long-term restriction of carbohydrates in the diet." Animal protein is also the most complex of all foods: it takes about twice as long as other foods to pass through your digestive system. The more slowly a food is digested in your body, which is a hot 98.6 degrees, the greater the chance that toxins can be created.There definitely have to be limits to the amount of concentrated protein you consume. The "eat as much animal protein as you can" theory is both aging to your skin and body, and dangerous. Taking in more protein than is needed places a heavy burden on your body, creating acidity (see Chapter 2 for more info on acidity) and wasting Beauty Energy—the very thing you are trying to avoid. The Lowdown on Fish Fish and seafood are generally good nutritional choices. But that's not to say that you should start loading up on seafood. Fish is cited as one of the most polluted foods you can eat. Three of the biggest water contaminants that are found in fish are hydrocarbons, PCBs and mercury, although there are others like DDT and fertilizers in our waters.The sad fact is that our water sources, including the oceans, lakes and rivers, have been polluted with megadoses of toxic chemicals, and fish today act as a sponge for toxins and are often heavily contaminated. Toxins diminish your beauty and age you faster, so although some will argue that fish has some positive health benefits, such as good omega-3 oils (which we'll discuss later; there are cleaner options for getting these fats), the benefits have to be balanced against the dangers.The American College of Obstetricians and Gynecologists and the American Academy of Pediatrics recommend strict limits on fish consumption for pregnant women because of risks posed to the developing fetus. However, especially if you eat out at restaurants for dinner and can choose from some better options (see below), you may choose to keep fish in your diet as part of your moderate amount of weekly animal protein intake.Here are some tips for choosing fish if you would like to eat it:Don't eat fish or seafood more than a maximum of two times a week.Choose fish that may be lower in heavy metals and toxins: wild Alaskan salmon, mahi-mahi, sole, tilapia, trout, striped sea bass, haddock, halibut and whitefish.Avoid fish high in toxins: swordfish, tuna, shark, bluefish, Chilean sea bass, tilefish, marlin, shellfish (which is particularly high in the heavy metal cadmium) such as shrimp and blue crab, Atlantic or farmed salmon, bluefish, wild striped bass, mackerel and grouper.Avoid store-bought canned tuna fish, which is high in mercury. A woman who eats just one can of tuna a week will be 30 percent over the EPA cutoff for safe mercury levels.Because a lot of the chemicals are stored in the fish's fat, be sure to broil or bake your fish to allow as much fat as possible to drain from it. When eating out, order baked fish as opposed to pan-seared or fried dishes.Be cautious when eating sushi and sashimi. If the fish weren't toxic, it would be a great choice since it's raw, and the amino acids that make up the fish proteins don't become denatured from cooking. But tuna, salmon and other fish commonly used for sushi and sashimi are often the most toxic fish of all.

I didn't expect any less from this book. I love all the color, and as for another commenter's thoughts on too many photos of Kimberly, I really enjoyed them. It is nice to see her so happy with such clear skin and looking so healthy in such simple environments. She is inspiring. This book is truly gorgeous. It was a really smooth read. I finished it the day it came, and way to go Amazon on that 2-day shipping, getting it to me the day it released! I was beyond excited to get this book, and I really don't feel disappointed at all. I think the recipes look great, especially the Portabello Mushroom Burgers, Green Spring Vegetable Risotto, Lasagna Supreme, Gluten Free Pizza, Sweet Potato Shepherd's Pie, Black Bean Burritos with Spicy Red Sauce and Spinach Basil Polenta with Creamy Sauce. I bought 3 books, so I got her 10 bonus beauty foods and recipes. We tried the Italian Stuffed Mushrooms, and they were a hit as well as quick and easy. I also made her Creamy Dijon Tahini Dressing today and I am in love! I dipped carrot sticks in it and ate it over a simple Kale and Sprouts salad. It is delicious! I can't wait to try some of the other recipes from the book. They are all quick, simple and full of extremely nutritious ingredients that can be found at my local grocery store. Also, my toddler loves the food! :) It helps that these were some of his first foods, but I definitely think these are all family friendly foods. Kimberly Snyder's books helped my husband and I to lose a combined 152 pounds so far. We are continuing on with our journey after one year, and we will never look back. Really useful information on food

This book initially seemed to me like it would be one of those annoying "diet trend" books. But it's not. Kimberly is definitely a health nut, and possibly a nutrition extremist, but her information is really helpful. I personally will probably not be getting weekly colonics or perform regular enemas on myself, but I learned a ton about how foods affect the body. Probably most useful to me was information about alkalinity and acidity.
When I say "nutrition extremist," I mean that she is obviously really healthy, but I would imagine it's hard to go out to eat or eat at other people's houses -- or even cook a meal with other people when you refuse all wheat and all dairy and all meat/fish/chicken/eggs, etc. I know lots of people are vegans, and that's great. I kind of wish I were one, but I have enough trouble just being super-busy and managing to eat relatively healthy foods. I will say that thanks to her, I am drinking Glowing Green Smoothies daily now.
This book is very interesting if you like nutrition/food books.

My before and after elbows show Kimberly's plan works!

I started Kimberly's Glowing Green Smoothies 20 days ago and my elbows are now as soft as my 10 year old son's elbows. Neither salt and sugar scrubs nor lotions did the trick before (my elbows were rough and dark for at least a decade as I am cruising into mid-life). But Kimberly's program, so easily read and understood in the Beauty Detox Foods, outlines changes you can incorporate into your food plan to begin getting results like baby soft elbows, weight loss, energy, great eliminations, relief of digestion disturbances, etc.

Those salt and sugar cravings I had going in my diet (I was not just using salt and sugar on my elbows LOL) are diminishing too. I had this huge craving for dairy and at the start thought this program sounded way too strict for me. I felt like I would still allow dairy in my diet (I'm a vegetarian). But after two weeks, the craving went away on its own and I now have had a tiny bit of goat cheese once in one week. I'm blown away by that. So, for the people that say whole food groups like dairy, meat, etc. are being cut out: Well, 1. They probably shouldn't be considered food groups in the first place and 2. Once you're eating more healthfully, your body doesn't even want them anyway. Beautiful health is at hand if you simply follow some of Kimberly's principles.

This book has even more sound and verified nutritional information than her first book, more of her delicious recipes (I crave just her GGS every morning but did transition with oatmeal for a little over a week, the veggie burger recipe is a super hit with the son and hubby (Dad is a meat eater) with son saying, "These are better than Trader Joes!", nut pate is divine and elegant, have tried many salad recipes and perhaps twisted them slightly with what I had on hand.) very simple outlines to follow as closely or loosely as your day allows, and one of my favorite aspects of the book are the gorgeous color photos of prepared recipes and Kimberly in her glowing gorgeousness. She is true proof that her program gets results.

I have to tell you that I became "introduced" to Kimberly by my friend that showed me a magazine article of Kimberly looking her beautiful self and doing this flipped over back-bend on hand-stand yoga pose. We both agreed that we were well beyond her in years and capacity of ever reaching a mile-wide smile or Cirque de Soleil abilities. And I bypassed on the article. But curiosity got the better of me and soon I was on her website and buying her first book The Beauty Detox Solution from Amazon. One day and I was hooked into incorporating more and more in a slow but sure manner. I still don't think I will ever be able to do that flexible and strong of a yoga pose but you know what? My own yoga, which I have been practicing for a year, improved last week and I was able to do poses I had never been able to do before. I love all this proof that something is working and not just on a scale. (I have lost fat too. Yay!)

I ordered The Beauty Detox Foods on Amazon and got three copies, knowing I would easily give two away for gifts. They arrived with black marks on them but a quick erasing with my son's white eraser got them back to pristine quality. Yesterday, I presented a copy to my step-daughter and she was really excited by it and immediately found some recipes she wants to try. I will be ordering even more for friends as this information is just too good and easy to keep to yourself. I think it would be wonderful if Kimberly's next book would be one for kids with a "Kimmy" caricature.

If there was ever ten bucks that could be spent wisely towards your health, it's by buying Kimberly's book. I really think most people will find something in it that will enhance their life. Some people are not willing to change one bit, but if you think you can try a few different things here or there and incorporate a bit more over time, go for it! I was so excited to learn about this book! After years of experiencing the standard American diet (S.A.D.) & knowing there must be something better, I have finally found truth! Kimberly Snyder has given me renewed hope that I can live simply and live well! I have been drinking a glowing green smoothie daily for almost two weeks and dropped 5 pounds without altering my diet in any other way (yet!). I like what Kimberly stands for. It's so hard to fix her recipes, unless you have a Vitamix, I just can't afford that to make her glowing glow drinks. I tried making it in my Nijji, didn't work. Thick and blah! I do like the bee pollen she eats every day. Managed to find that at my farmer's market. I'm sure most people can't find that. Her tips are helpful though.
Good on her, for her glowing good looks, and the celebrity customers who follow her. I would like to go sometime to her smoothie bar in L.A. Wish I knew where it was located in Los Angeles. Don't know if I was so helpful, just honest.

Great info, recipes and most importantly, results!

I haven't written a review in ages but I sure love reading everyone elses! I bought this book the day it came out and my cousin and I immediately got to work on following it to a tee! T? Who knows :) I'm short and about 30lbs overweight and in the first week or so I lost 7 lbs. I'd been slightly following some of her suggestions from the first book. Like the smoothie and the light to heavy eating. I swear if we would just follow everything she says in here 90% of the time we'd all be our personal bests without working out like crazy or depriving ourselves. I fall off the wagon and get back on from time to time, but it always works and you can always come back to this way of eating. My favourite recipes that I've tried are the mushroom soup, the probiotic borscht soup and the chocolate macaroons (damn things, maybe don't even try them). There are a couple like the raw pad thai that I didn't love and wouldn't make again but maybe they'll appeal to you! Kim is great, I'm grateful that she cares so much about health and how it affects the way we look and feel. Don't listen to the naysayers. I think there are lots of different schools of thought and sometimes different things work for different people but there is too much evidence, both personal and otherwise, to prove to me that meat (I've been a veg for 10 years) and dairy (taking it one day at a time) are bad for our health. I've struggled with acne my whole entire life. It's been such a painful struggle and it affects every aspect of my life when its bad. Cutting out dairy and increasing the raw fruit and veg has helped immensely. I'll throw in an additional plug incase anyone else is experiencing the same, but I LOVE eminence organics skin care. The probiotic line has really improved my skin, even on the days when I fall victim to the siren call of cheese. Another book to check out with good healthy food is Gwyneth's It's All Good (just replace her olive oil with coconut :)) God Bless
