Fabulous Relatable Beautiful Cookbook

Laura Lea you have done it again!!! Your long awaited cookbook #2 arrived today and I couldn’t be happier. I love real cookbooks. The kind you can read over and over again, make notes, highlight, fold the corners down on my favorite recipes and a handy notebook to write down ingredients for recipes to start making right away. During this time of staying at home I am excited to continue working on my cooking skills. Your recipes are relatable. They are the recipes I order in restaurants and wish I could make at home. And they are as wonderful as the pictures in this beautiful book. 5 Stars

Ok So Far

The first cookbook is full of great recipes, and I was so excited to receive this new cookbook! First, the recipes are easy to follow and they all have gorgeous photos. I’ve made several items out of it so far: pineapple fajitas, cajun chicken pasta, fluffy egg bake, & raspberry popovers. All of them have been ok— ranging from edible to C+. I am wondering if differences in brands of ingredients matters here (For example, coconut milk used in the egg bake made it taste like coconut). I’m going to forge forward with a few more recipes as I hope to find some amazing staples as I did in her first volume (turkey jalapeño meatloaf anyone?). The author is also very kind and willing to help with recipe issues if you reach out.

A bonus for keto/vegan/vegetarians — there’s a lot of recipes for you here!

Truly amazing...order IMMEDIATELY!!

Y'all order this cookbook, STAT. I implore you! I preordered it back in the Fall and she sent out some recipes early so despite getting this cookbook just a few days ago, I've had the chance to make a few items from it including the buffalo cauliflower hummus, the double chocolate avocado blender muffins, the hungry girl cookies, and the pumpkin spice cake. I've also made a ton of recipes from her blog and her first cookbook. Let me just tell you...they are all phenomenal. Alas, what's most amazing about this cookbook is the THOUGHTFULNESS of it. Since I've been making her recipes for a while, I have a ton of her staples already stocked in my pantry and fridge (think nutritional yeast, miso paste, almond flour) so when I went through the book, I literally will pretty much just have to get the fresh veggies & fruit or anything chilled like tofu or tempeh to make the desired recipe. I own a million cookbooks all w/ delicious recipes, but I don't make a fraction of them b/c I would have to buy a multitude of random ingredients (many not even available at most grocery stores) and whatever I don't use of said ingredient would go bad before I used it up. Therefore, her streamlining makes this cookbook so accessible, smart and economical! Also, I'm vegetarian and can't eat any cow dairy and there are SO many recipes for me to make in here! She said people requested more veg/vegan dishes and she definitely delivered. I could not be more grateful. Also, she gives a ton of alternatives if you want to make a vegetarian recipe vegan. The only recipe I struggled a bit with was the pumpkin spice cake and here's why...the cake was great, but I subbed vegan cream cheese for the regular cream cheese and I think I should have let it come to room temp before mixing with the butter. I actually have a degree in baking and pastry arts from the Culinary Institute of America and I do think the having the traditional cream cheese cold with the room temp butter would have worked, but since I subbed the alternative, it ended up lumpy despite perpetual mixing. Otherwise, I've had grand success with all of her recipes...specifically the hungry girl cookies are TO DIE FOR! My sis is GF and is beyond obsessed with them. Oh, I meant to mention that the only pantry item I've had to get is Frank's RedHot which seems so random, but her explanation of why she uses it is so logical and, actually, a bit genius. Buy the book so you can discover why!! Thank you, LL, for bringing such delicious and nutritious food into my kitchen and belly!!

Great for Gluten Free diet!

The second cookbook by Laura Lea does not disappoint! She has a knack for making healthy food delicious and easy to make. I promise your taste buds will thank you, and you will keep coming back for more with every recipe. I am a gluten free eater, and there are so many choices in here for me. Moreover, most of the recipes have distinct alternatives for us with sensitive diets. RUN to this cookbook, don’t walk!!

A little disappointing.

I was very excited to receive her second cookbook, however must admit I am a little disappointed upon look at the recipes as they are dominated by vegan meals. While I liked a sprinkling of vegan recipes in the first, I doesn’t want a cookbook with a majority. I wish she has been more forthright about that as this cookbook definitely has a different vibe than the last.

Odd, kind of unappetizing food (French dip calzones, anyone?). Tried the banana pudding, and it was a C- at best. I’m disappointed so far; I’ve been looking forward to this release for quite a while. UPDATE: yeah this one isn’t good. Every page is just like, “Ew, no”

You NEED this cookbook!

I found Laura Lea a few years ago on instagram and have been to several of her cooking classes. I love her recipes and several from her first cookbook and blog are staples in my kitchen. I was so excited for the release of her second cookbook. First, this new cookbook is a BOOK! I'm talking 367 pages! I have only had the book less than a week but I have tried several recipes and can highly recommend: 5 layer magic bars on pg. 315, Double chocolate avocado blender muffins on pg. 109 (and I'm not even a huge chocolate lover!), charred green bean and farro salad on pg. 293, Buffalo Cauliflower Hummus on pg. 134 and my personal favorite, Cashew Kimchi Lettuce cups on pg. 137. If you are questioning wether you need this cookbook my answer is emphatically YES!!! You will not be disappointed and you will have so many recipes to choose from. I am sure several from this cookbook will also become a staple in my kitchen!

Feast for the eyes and appetite!

Relaxing with a cup of joe and dreaming of new recipes while perusing this cookbook, it is visually stimulating! I will need to stock up my pantry with some new staples, but look forward to the challenge of thinking outside the box. I love her everyday approach to cooking and her honest write ups about the recipes. Also, nice to have a reference for the items needed and substitutions. I have tried a few recipes from her IG stories, never disappointing!

I would imagine it’s intimidating to write a second cookbook after your first one is such a success but Laura Lea proves that she can continually deliver fresh, authentic, healthy and indulgent recipes for EVERY diet and palate again and again.

My sisters and I have been fans of LL’s cooking and lifestyle for a while now, and what we find most attractive about her is that instead of caving to trends and becoming something that she’s not LL has a remarkable ability to stay true to her genuine self while growing as a chef and person- and that’s reflected in her cooking, website, and her Instagram account (a MUST follow@LauraLeaBalanced)

She has everything from scrumptious savory dishes like her Turkey Cheddar Lasagna and Artichoke Leek & White Bean Gratin, to dreamy side dishes like Creamy Corn and Chive Farro and Miso Coconut Roasted Eggplant to surprisingly not so sinful treats like Double Chocolate Avocado Blender Muffins and Grain-Free Java Pecan Pie to “out of the box”recipes like Sun-dried Tomato and Walnut Paté and Roasted Romain with Basil Caesar Hummus Dressing… MUST I GO ON?!?! My mouth is literally WATERING writing this… Each time we've made one of her recipes we've gotten TONS of complements and seen a few plate-lickers :)
